Crockpot Cabbage Roll Casserole with Cooked Rice
This crockpot cabbage roll casserole combines ground beef, cabbage, and tomato sauce without rolling individual leaves. Cook the rice separately and fold it in at the end. That gives you more control over the grains while the cabbage gets the time it needs to soften.

Ingredients and equipment
- 1 pound (450 g) ground beef
- 1 medium onion, diced
- 3 garlic cloves, minced
- 2 pounds (900 g) prepared green cabbage, chopped into 1-inch pieces
- 1 can (28 ounces/794 g) crushed tomatoes
- 2 tablespoons tomato paste
- 1/2 cup (120 ml) low-sodium beef broth
- 1 teaspoon sweet paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt, plus more to taste
- 1/4 teaspoon black pepper
- 3 cups freshly cooked long-grain white rice, from about 1 cup dry rice cooked according to its package
- 1 tablespoon apple cider vinegar, optional
You will need a slow cooker, knife, measuring jug, and serving spoon. Also have a skillet, rice pot, and food thermometer ready.
Step 1: Prepare the cabbage
Remove damaged outer leaves, rinse the cabbage, and cut out the firm core. Chop 2 pounds of prepared cabbage into roughly 1-inch pieces. Use a 6-quart slow cooker and follow its fill limit; switch to a larger cooker if the ingredients do not fit comfortably.
Step 2: Cook the beef and onion
Brown the ground beef and onion in a skillet over medium heat, breaking the beef into small crumbles. Cook the beef to 160°F (71°C), then drain excess fat. Add the garlic and cook briefly. Stir in the tomato paste, paprika, and oregano.
Step 3: Add the sauce and cabbage
Put the cabbage in the slow cooker. Stir the crushed tomatoes, broth, salt, and pepper into the hot beef mixture, then pour it over the cabbage. Mix gently so the leaves are coated. Start cooking immediately; do not leave partially assembled food at room temperature.
Step 4: Slow cook until the cabbage is tender
Cover and cook on LOW for about 4–6 hours or HIGH for about 2–3 hours. Begin checking at the lower end of the range. The thick pieces of cabbage should be easily pierced with a fork. Keep the rice out of the slow cooker during this stage.
Step 5: Cook and add the rice
Near the end of the slow-cooking time, cook about 1 cup dry long-grain white rice according to the package directions. Measure 3 cups of the freshly cooked rice and fold it into the hot cabbage mixture. Cover briefly until the casserole is hot throughout, checking for 165°F (74°C) after mixing. Do not continue cooking for hours once the rice is added.
Step 6: Adjust and serve
Taste before adding more salt. Add the optional vinegar a little at a time if you want a sharper tomato flavor. If the dish is too loose, serve with a slotted spoon or reduce a ladleful of sauce in a saucepan and stir it back in. Serve while hot.
Why cook the rice separately?
In a slow cooker, cabbage, raw rice, and sauce can finish at different times. Cooking the rice separately means you can stop when the cabbage is tender and add already-cooked grains without guessing how much extra liquid the rice will absorb.
This is a cooked-rice recipe. Do not replace 3 cups cooked rice with 3 cups dry rice. If using brown rice, cook it separately according to its own package, then measure the cooked amount.
Crockpot cabbage casserole versus stuffed cabbage rolls
Traditional rolls wrap a filling in individual cabbage leaves. This casserole chops the cabbage and combines it with a tomato-and-beef base. It is meant to be spooned onto plates rather than cut into firm baked squares.
It also differs from creamy Southern cabbage casserole, which may use a creamy sauce and a crumb topping. Choose the dish by the ingredients and texture you want.
Fixing watery or dry casserole
A watery sauce can come from the cabbage itself. Keep the broth to the stated amount. For thicker sauce, reduce some in a saucepan instead of leaving the rice in the cooker for a long uncovered cook.
If the cabbage is still firm and the sauce looks dry, add a little hot broth, replace the lid, and keep cooking before adding rice. Cutting away the core and keeping pieces similar in size helps them cook evenly.
Can I change the meat or omit it?
Ground turkey can replace beef, but cook it to 165°F (74°C) in the skillet before assembling. Use vegetable broth if changing the flavor of the sauce.
A meat-free version needs a separate plan for its protein and liquid. Cooked lentils or beans can change the thickness considerably; they are not a tested one-for-one replacement in this formulation.
Storing casserole safely when it contains rice
Divide leftovers into shallow portions and cool quickly, ideally within 1 hour. Refrigerate at 40°F (4°C) or below. Following the Food Standards Agency’s rice advice, use refrigerated rice dishes within 24 hours and reheat only once.
For longer storage, freeze promptly in meal-sized containers and use within 2 months for best quality. Thaw in the refrigerator and reheat on the stove, in the oven, or in the microwave until 165°F (74°C) throughout. Stir or turn portions to prevent cold spots.
Do not leave the rice to cool in the switched-off slow cooker. Reheating does not make poorly stored rice safe.
What to serve alongside it
A cucumber salad or a slice of bread works well with the tomato sauce. Keep any optional cheese at the table so each person can add it to their serving.
If cooking for a smaller household, halve the ingredients and use an appropriately sized cooker. Timing still depends on how full the cooker is and how quickly the cabbage softens.
