Caramel Apple Iced Coffee With Homemade Apple Syrup

A small batch of apple syrup gives this iced coffee its fruit flavor without requiring a flavored coffee blend. Simmer diced apple with sugar and water, drain gently, then stir a measured spoonful into chilled coffee with caramel syrup. The default drink is served without milk, which keeps the apple flavor easier to judge.
Prep Time 5 minutes
Cook Time 15 minutes
Draining and cooling 15 minutes
Total Time 35 minutes
Servings: 4 drinks; syrup yield is approximate

Ingredients

  • 1 medium sweet apple about 150 g before coring; washed and cut into small dice
  • 3/4 cup water 180 ml, for the syrup
  • 1/4 cup granulated sugar 50 g
  • 3 cups chilled brewed coffee 720 ml; ready to drink, not undiluted cold-brew concentrate
  • 4 tsp caramel coffee syrup 1 teaspoon per drink; choose a pourable syrup
  • 3 cups ice cubes approximately, divided among four glasses
  • 1 cup cold oat milk optional; up to 1/4 cup per drink

Equipment

  • 1 Knife and chopping board
  • 1 Small saucepan with lid
  • 1 Fine-mesh sieve
  • 1 Heatproof jug
  • 1 Clean lidded jar
  • 1 Four tall 16-ounce glasses

Method

  1. Wash the apple, remove its core and seeds, and dice the flesh. Put the water and sugar in a small saucepan over medium-low heat. Stir until the sugar dissolves, then add the apple pieces.
  2. Bring the mixture to a gentle simmer. Lower the heat, partly cover and cook for about 10–12 minutes, stirring occasionally, until the apple softens. Keep some liquid in the pan and avoid boiling it down to a sticky glaze. Cooking times depend on the apple and pan.
  3. Set a fine-mesh sieve over a heatproof jug. Carefully pour in the mixture and let it drain for about 5 minutes without pressing the apple. Leave the syrup to cool for about 10 minutes, using a shallow heatproof container if needed. Measure the yield. Reserve 1/4 cup for the four drinks and refrigerate the rest promptly.
  4. For each drink, stir 1 tablespoon of cooled apple syrup and 1 teaspoon of caramel syrup into 3/4 cup of chilled coffee. Add about 3/4 cup of ice to a tall glass and pour in the flavored coffee. Taste before adding more syrup. If using oat milk, add up to 1/4 cup and stir. Repeat for the other glasses and serve immediately.

Notes

Recipe development note: This formulation has not been kitchen-tested. Preparation times are estimates; follow the texture checks and product instructions.
The recipe makes four drinks using coffee that is already brewed and chilled. The apple syrup should yield roughly 1/2 cup, but evaporation and straining will change the amount. Four drinks use 1/4 cup of syrup altogether; refrigerate any remainder. Cooling the brewed coffee is not included in the stated recipe time.
Start with the measured amounts rather than pouring both syrups freely. Caramel can quickly cover the apple flavor. If that happens, use less caramel in the next glass; adding more apple syrup to an already sweet drink may only make it sweeter.
Pressing the apple through the sieve makes a sauce-like mixture with pulp. Let gravity do the draining for a cleaner drink. Some cloudiness is still possible with fruit syrup. If the chilled syrup is too thick, thin the portion you are using with a teaspoon of water, rather than reheating the whole jar.
Refrigerate unused apple syrup promptly in a clean covered jar at 40°F/4°C or below and use it within four days as a conservative household limit; its shelf life has not been tested. This formulation is not suitable for shelf-stable storage or home canning. Use a clean spoon each time. Assemble the coffee over ice only when serving, and keep any added milk refrigerated. Perishable drinks should not sit out beyond two hours, or one hour above 90°F/32°C.
