Iced Einspänner with Instant Coffee

A layer of lightly sweetened cream sits above strong iced coffee in this home version of an einspänner. Instant coffee replaces the espresso machine. Keep the base cold and the cream softly whipped so the topping rests on the coffee instead of dissolving into it immediately.

Total Time 10 minutes
Servings: 1 drink

Ingredients

  • 2 tsp instant coffee granules start here; adjust to your brand
  • 1/4 cup hot drinking water 60 ml
  • 1/2 cup cold drinking water 120 ml
  • 1/3 cup heavy whipping cream 80 ml; cold, about 35% fat or more
  • 2 tsp powdered sugar
  • 1/8 tsp vanilla extract optional
  • 1/2 cup ice cubes or enough for the glass
  • 1/8 tsp unsweetened cocoa powder optional topping

Equipment

  • 1 Heatproof measuring jug
  • 1 Small chilled bowl
  • 1 Whisk
  • 1 12-ounce serving glass

Method

  1. Stir the instant coffee into the hot water in a heatproof jug until no granules remain. Add cold water. Let the base cool fully before pouring over ice; if it is still warm, chill it briefly rather than using extra ice to force it cold.
  2. In a chilled bowl, whisk cold cream with powdered sugar and optional vanilla. Stop when the cream holds a soft mound and the whisk leaves trails. It should slide slowly from a spoon, not stand in dry, rigid clumps.
  3. Add ice to a clean 12-ounce glass and pour in the cooled coffee, leaving room for cream. Taste a little coffee before topping. If it is too strong, add a tablespoon of cold water and taste again.
  4. Spoon the cream gently over the surface. Dust lightly with optional cocoa and serve immediately. Sip through the cream for the contrasting layers, or stir if you prefer a uniformly creamy drink.

Notes

Recipe development note: This formulation has not been kitchen-tested. Cooking and preparation times are estimates; follow the stated texture checks and product instructions.
A topping that disappears quickly may be under-whipped, too warm or made with low-fat cream. Chill it and whisk briefly again. Check that the coffee itself has cooled before repeating the pour.
If the cream turns grainy, stop whisking. Fold in a small splash of unwhipped cold cream by hand to soften an early over-whipped batch. Cream that has separated into butter and liquid will no longer work as this topping.
Keep coffee and whipped cream separate in covered containers in the refrigerator and use within 24 hours for this preparation. Briefly re-whisk cream if it loosens. Assemble just before serving. Refrigerate dairy promptly; discard perishable components left out beyond 2 hours, or 1 hour above 90°F (32°C).
