- Heat the oven to 425°F (220°C). Toss sweet potato cubes with oil and half the salt. Spread in one layer on a rimmed sheet pan. Roast for about 25–30 minutes, turning once, until tender in the center with browned edges.
- Meanwhile, place the beef in a skillet over medium-high heat. Break into small pieces and add cumin, paprika, garlic powder, pepper and remaining salt. Cook until the beef reaches 160°F (71°C), checking with a thermometer. Drain excess fat if needed.
- Dice the cucumber and slice the scallions. Keep the cottage cheese chilled until ready to assemble. Measure the hot honey so the first bowls do not use up the whole quantity.
- Divide sweet potatoes and beef among four bowls. Add 1/2 cup cottage cheese and 1/4 cup cucumber to each. Drizzle each bowl with 1/2 tablespoon hot honey and finish with scallions. Serve promptly.
Notes
Recipe development note: This formulation has not been kitchen-tested. Cooking times are estimates; use the stated texture and temperature checks.
Crowding the tray makes potatoes steam rather than brown. Use two trays if necessary and rotate their positions. If the beef is dry, a tablespoon or two of water can loosen it before serving. Do not heat cottage cheese with the raw beef.
Refrigerate cooked beef and potatoes separately from cottage cheese and cucumber within 2 hours, or 1 hour above 90°F (32°C). Use within 3 days. Reheat the cooked components to 165°F (74°C), then add cold toppings and the honey.
