No-Churn Black Sesame Ice Cream
Unsweetened roasted black sesame paste flavors this no-churn ice cream, while whipped cream supplies the air that an ice cream machine would usually work into the mixture. Mix the sesame base separately, then fold it through the cream so there are no dark lumps.
Use a smooth paste made from roasted black sesame, ideally with sesame as the only ingredient. Sweetened dessert fillings and black tahini made from differently processed seeds are not guaranteed to give the same flavor or sugar balance. The finished color will vary from gray to charcoal.
Recipe development note: This formulation has not been kitchen-tested. Cooking and preparation times are estimates; follow the stated texture checks and product instructions.
Choosing a smooth sesame paste
Smoothness starts with the paste. If it feels gritty between your fingers, that texture can remain in the ice cream. A fine commercial roasted paste is the simplest starting point. Read its ingredient list so you know whether sugar has already been added.
Sweetened condensed milk is thick and sugary; evaporated milk is not an equivalent replacement. This no-churn method relies on both dairy fat and dissolved sugar for its texture. Reducing either substantially requires a separately tested formulation.
Keep the cream cold until whipping. A cool bowl helps, especially in a warm kitchen. Before starting, make sure the freezer has space for a level container and is holding its normal freezing temperature.
Mix, fold and freeze without a machine
Step 1: Mix the sesame base
Stir any separated oil back into the sesame paste. In a bowl, whisk the condensed milk, sesame paste, vanilla and salt until the mixture is an even dark color. Break up every visible streak or lump before adding cream.
Step 2: Whip the cold cream
In a separate cold bowl, whip the cream until medium-firm peaks form. The peaks should hold shape with slightly bending tips. Stop before the surface looks grainy or the cream separates. A hand whisk works but takes longer than an electric mixer.
Step 3: Fold and fill the container
Stir one large spoonful of whipped cream into the sesame base to loosen it. Fold the remaining cream in two additions using a spatula, lifting from the bottom and turning the bowl. Stop when evenly gray. Transfer to a freezer-safe container and level the surface.
Step 4: Freeze and scoop
Cover tightly and freeze level for at least 6 hours, preferably overnight, until firm throughout. Let the container stand for about 5–10 minutes before scooping, checking frequently in a warm room. Return the remaining ice cream to the freezer promptly.
Fixing grit, ice crystals and hard scoops
Dark streaks mean the paste was not completely blended into the condensed milk before folding. Avoid solving this by aggressively whisking the entire batch, which knocks air out of the cream. Make a smooth base first.
Large ice crystals often follow a loose lid, slow freezing or repeated thawing. Use a shallow, well-covered container and take out only what you plan to serve. A very hard scoop can also reflect a cold freezer; brief tempering is more useful than melting the whole pan.
Serving and optional toppings
Serve a small scoop beside fresh raspberries or sprinkle with a few toasted sesame seeds. Keep toppings separate during storage so their texture is not lost. This base is intentionally sesame-forward; any chocolate or cookie addition will change the flavor and has not been tested here.
Freezer storage and safe handling
Keep tightly covered in the freezer and use within 2 weeks for best texture. Press freezer-safe wrap against the surface if your container does not seal well. Use a clean scoop and return the container promptly. Do not refreeze a batch that has fully melted or has sat warm for an extended period.
Questions about no-churn black sesame ice cream
Do I need an ice cream machine?
No. The whipped cream adds air before freezing. Gentle folding keeps that air in the mixture, which is why the cream should not be stirred flat.
Can I use evaporated milk?
Not as a direct replacement. It lacks the sugar concentration of sweetened condensed milk and changes the freezing behavior. Use the ingredient specified.
Can I grind my own sesame paste?
A capable grinder or food processor can make paste from roasted seeds, but smoothness varies. Let toasted seeds cool first and grind thoroughly; a coarse seed powder is not identical to the smooth paste used here.
