Slow Cooker Cabbage Without Bacon

This slow cooker cabbage uses onion, butter, and smoked paprika for a meat-free side. The leaves turn soft without needing a pot full of broth. Add vinegar after cooking for a sharper finish, and stop when the cabbage reaches the texture you like.

Ingredients and equipment

  • 2 pounds (900 g) prepared green cabbage, core removed
  • 1 small onion, thinly sliced
  • 2 garlic cloves, minced
  • 1/2 cup (120 ml) low-sodium vegetable broth
  • 3 tablespoons unsalted butter, cut into small pieces
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • 1 tablespoon apple cider vinegar, added after cooking

You will need a slow cooker, knife, measuring jug, and serving spoon. A 5- to 6-quart cooker gives the cabbage room to settle.

Step 1: Cut the cabbage

Remove damaged outer leaves and rinse the cabbage. Quarter it, remove the hard core, and cut the leaves into pieces about 1 1/2 inches wide. Weigh the prepared cabbage so an unusually large head does not crowd the cooker.

Step 2: Fill the slow cooker

Put the cabbage and onion in a 5- to 6-quart slow cooker. Mix the broth with garlic, paprika, salt, and pepper, then pour it over the vegetables. Scatter the butter on top. Follow your cooker’s fill limits and do not pack the leaves tightly.

Step 3: Cook until tender

Cover and cook on LOW for about 4–5 hours or HIGH for about 2–3 hours. Start checking at the lower end of the range. Gently turn the cabbage once when checking so the upper pieces receive some broth. Keep the lid on between checks.

Step 4: Taste and finish

Stop cooking when the thick leaf sections are tender enough for your taste. Stir in the apple cider vinegar and adjust salt and pepper. Use a slotted spoon for serving if you want to leave the cooking liquid behind.

How much liquid does crockpot cabbage need?

Start with the measured 1/2 cup of broth. Cabbage releases moisture as it softens, and a covered slow cooker loses little liquid. Adding enough broth to cover the leaves can turn a side dish into soup.

If the cooker appears dry around the edges, add a small splash of hot broth. A wide cooker, a loose lid, or a small batch can affect evaporation.

Keep the cabbage tender rather than mushy

Cut broad pieces rather than fine shreds. The thick ribs take longer than the thin leaf edges, so check a thick piece before deciding the batch is done.

Cooking times vary by appliance and cabbage size. Do not keep cooking just because the maximum time has not passed. Once the texture is right, serve it or move it to storage containers.

Vegan and seasoning variations

For a vegan version, use dairy-free butter with the same amount of vegetable broth. Check the butter label if cooking for someone with an allergy.

For more heat, add a small pinch of red pepper flakes. For a less smoky side, replace smoked paprika with sweet paprika. Keep vinegar for the finish so you can taste and control the tang.

What to serve with cabbage without bacon

Serve it alongside roasted potatoes, beans, or lemon garlic chicken. For a tomato-and-beef main dish instead, see the cabbage roll casserole.

This recipe is a vegetable side. Adding raw meat or large potato pieces changes both cooking and safety requirements; use a recipe written for that combination.

Storage and reheating

Refrigerate leftovers in shallow covered containers within 2 hours. Keep at 40°F (4°C) or below and use within 3 days. Freeze for up to 2 months for best quality, allowing space for expansion. The cabbage will be softer after freezing. See USDA’s leftover advice.

Reheat on the stove or in the microwave to 165°F (74°C). Add a spoonful of broth if needed. Do not use a slow cooker to slowly reheat cold leftovers.

Recipe questions

Can I use red cabbage? It has a different texture and color and may need a different cooking time. Green cabbage is the choice for the stated estimates.

Can I double the recipe? Only if the larger batch fits within your appliance’s fill limits. A tightly packed cooker may heat unevenly.

Can I prepare it the night before? Cut the vegetables and keep them refrigerated. Assemble and start the cooker when you are ready to cook.
