Banana Iced Coffee With Instant Coffee

This banana iced coffee combines a small serving of strong instant coffee with freshly blended banana milk. Half a ripe banana gives the drink body without making a whole glass of smoothie. You need a blender, a heatproof cup and a tall glass; an espresso machine is not required.
Prep Time 5 minutes
Cooling the coffee 5 minutes
Total Time 10 minutes
Servings: 1 drink

Ingredients

  • 2 tsp instant coffee granules regular or decaffeinated; adjust to your brand
  • 1/4 cup hot water 60 ml
  • 1/2 medium ripe banana about 55 g peeled
  • 3/4 cup cold milk 180 ml; dairy milk or an unsweetened milk alternative
  • 1/4 tsp vanilla extract optional
  • 1 tsp maple syrup optional, to taste
  • 3/4 cup ice cubes approximately; enough to chill the drink

Equipment

  • 1 Heatproof cup or small jug
  • 1 Blender
  • 1 Tall 16-ounce glass
  • 1 Spoon

Method

  1. Put the instant coffee in a heatproof cup and add the hot water. Stir until no granules remain. Let it cool for about 5 minutes, or stand the cup in a bowl of cold water to cool it more quickly. It should no longer be steaming when poured over ice.
  2. Place the peeled half banana, cold milk and optional vanilla in a blender. Blend for 20–30 seconds, then check for pieces and blend again briefly if needed. Taste the banana milk; add the optional maple syrup only if you want more sweetness.
  3. Fill a tall 16-ounce glass with about 3/4 cup of ice. Pour the cooled coffee over it. Leave enough room for the banana milk. If your glass is smaller, use less ice or divide the drink between two glasses.
  4. Pour the banana milk over the coffee. Layers may show briefly, but stir before drinking so each sip has both coffee and fruit. Serve immediately. If the drink feels too thick, stir in 1 tablespoon of cold milk at a time rather than adding more banana.

Notes

Recipe development note: This formulation has not been kitchen-tested. Cooking and preparation times are estimates; follow the stated texture checks and product instructions.
Blending the banana with only a splash of milk can leave stubborn pieces around the blade. Add the full measured amount and pause to check the texture. A small blender may work better for a single serving than a large jug whose blades sit above the ingredients. Mashing with a fork is an option, but it will leave a visibly pulpy drink.
Some settling is normal because banana pulp is suspended in the milk. Stir again as you drink. A hard layer of coffee granules points to incomplete dissolving, whereas soft flecks are more likely to be fruit. Preparing the two components separately helps you identify which needs attention.
Blend and assemble just before drinking for the best texture. If you need to prepare the banana milk ahead, cover it, refrigerate immediately and use it the same day. It may darken and settle, so stir or briefly blend it again. Keep the coffee separate from the ice until serving. Do not leave milk-based drinks at room temperature for more than two hours, or one hour in temperatures above 90°F/32°C.
