Cardamom Latte With Instant Coffee

Warm milk steeped with green cardamom gives this instant-coffee latte its floral, lightly spiced flavor. Crack the pods, warm them in the milk, then strain before pouring. The coffee dissolves separately, so there is no need to beat a coffee paste or use an espresso machine.

This recipe makes one mug with a thin layer of milk foam. It uses whole pods to keep most of the spice out of the finished drink. Start with three pods and a short steep; cardamom varies in strength, and a longer infusion can overwhelm a small serving of coffee.

Recipe development note: This formulation has not been kitchen-tested. Preparation times are estimates; follow the texture checks and product instructions.

Whole cardamom pods, milk and instant coffee

Green cardamom has a different flavor from smoky black cardamom. Open the green pods just enough for the seeds to contact the milk; you do not need to grind them. Straining removes the pods and most loose seeds before serving.

Use plain instant coffee rather than a sachet containing creamer and sugar. The measured amount is a starting point, because brands differ. Dissolve it fully in the hot water before adding milk.

Whole milk gives a fuller drink, while a barista-style milk alternative may produce more foam than a thin variety. Frothing is optional. Warm, unfrothed cardamom milk still makes the same basic latte.

How to steep the milk and assemble the latte

Step 1: Crack the pods and warm the milk

Set the cardamom pods on a chopping board and press gently with the flat side of a knife to open the shells. Put them in a small saucepan with the milk and optional sugar. Warm over medium-low heat for about 3–5 minutes, stirring, until the milk steams and small bubbles appear at the edge. Do not bring it to a rolling boil.

Step 2: Steep briefly, then strain

Take the pan off the heat. Cover and let the pods steep for 3 minutes. Taste a small cooled spoonful. When the spice level suits you, pour the milk through a fine-mesh sieve into a heatproof jug. Discard the pods and seeds.

Step 3: Dissolve the instant coffee

While the milk steeps, put the instant coffee in a 12-ounce mug and add the hot water. Stir until the granules are completely dissolved. Check the bottom of the mug for any dry coffee before adding the milk.

Step 4: Froth the milk and pour

Whisk the strained milk briefly, or use a handheld frother in a deep jug with room for expansion. Avoid splashing hot milk. Pour it into the coffee, spooning any remaining foam on top. Stir gently and serve while warm. Skip frothing if you prefer a smooth surface.

Fixing weak spice, gritty coffee or flat foam

If the cardamom seems faint, the pods may be old or the shells may not have opened enough. For the next mug, crack them more thoroughly or extend the off-heat steep by a minute. Add one extra pod only after tasting; strong spice is difficult to remove once the drink is assembled.

A gritty finish can come from coffee granules or escaped cardamom seeds. Dissolve the coffee separately and use a sieve fine enough to catch the seeds. If the milk scorches, start again with a clean pan and lower heat. Frothing cannot remove a burnt flavor.

Making it less sweet or serving it over ice

For a less sweet latte, omit the sugar and taste the finished drink before adding any. Decaf instant coffee can replace regular instant coffee. For an iced version, cool the strained milk and dissolved coffee separately, refrigerate promptly, then pour over ice in a larger glass. Do not put hot milk into a tightly sealed jar to shake it. Ground cardamom is a different method: a small pinch can flavor the milk, but fine particles may remain after straining.

Preparing the cardamom milk ahead

This single-serving drink is best made fresh. If preparing ahead, refrigerate the strained cardamom milk promptly in a clean covered container and use it within 24 hours. Warm it gently, stir, and combine with freshly dissolved coffee. Keep perishable drinks out for no more than two hours, or one hour above 90°F/32°C, and keep the refrigerator at 40°F/4°C or below.

Questions about this recipe

Can I make the latte without a frother?

Yes. Whisk the milk by hand for a little foam, or simply pour the strained warm milk into the coffee. Foam changes the surface texture, not the cardamom infusion.

Do I need cardamom syrup?

No. The pods steep directly in the milk, and sugar is optional. That lets you adjust the spice without making a whole bottle of syrup.

Can brewed coffee replace instant coffee?

Use 1/4 cup of strong brewed coffee in place of the instant coffee and water. A larger volume of ordinary coffee will make a different drink, so keep the coffee portion small at first.
